Dinner at Squisitia Restaurant is served daily from 7:00 pm to 10:00 pm in winter, and from 7:30 pm to 10:30 pm in summer, in the open-air area set within our spacious, flower-filled garden. Our cuisine is driven by a constant search for top-quality ingredients, with the aim of showcasing Pisa and the Tuscan region through traditional local dishes. Each recipe combines excellent, locally sourced (km 0) produce, the authentic flavour of tradition, and a touch of creativity.
In our kitchen, “handmade” is king: fresh pasta, pastries, and baked goods are all prepared by our chefs. Some ingredients come from outstanding local producers, including Fattoria Biosole (San Miniato, Pisa), Azienda Agricola di Elter Francesco (Calci, Pisa), Caseificio Pedrazzi in the Park of San Rossore (Pisa), Pastificio Bertoli (Santa Luce, Pisa) and Pastificio Martelli (Lari, Pisa).
We select only the finest cuts of meat, carefully aged in our maturation cabinet to ensure exceptional freshness and quality. For example, our Tuscan Chianina is dry-aged for a minimum of 30 days to achieve outstanding tenderness. We also offer Manzetta Prussiana from selected farms in Poland, and Irish Black Angus. Meats are cooked in a Josper oven, fuelled with wood and charcoal, for an intense and distinctive flavour.
